Healthy Quinoa Bites for Kids

This recipe I found on the internet after researching the benefits of sweet potato and quinoa. While as adults we think this food is to high in carbohydrate it is so essential for young brains to have carbs in order to grow.

These delicious healthy Sweet Potato Quinoa Bites oven baked to perfection! The perfect on-the-go-snack or main meal for toddlers and children.

Ingredients

• 1 cup leftover mashed sweet potato cold

• 1 cup cooked quinoa

• 1/2 cup grated cheese

• sesame seeds to sprinkle

Instructions

1 Preheat oven to 200 degrees celsius (fan forced).

2 Line a baking tray with greaseproof baking paper.

3 Place the cold mashed sweet potato and the cooked quinoa into a bowl.

4 Add the grated cheese and stir to combine.

5 Use a tablespoon to place dollops of the mixture onto the baking tray and shape into a small pattie shape.

6 Sprinkle with sesame seeds and lightly spray with olive oil cooking spray.

7 Bake for 20 minutes and then turn over the bites over. Sprinkle with extra sesame seeds and lightly spray with olive oil.

8 Bake for a further 15 minutes.

9 Allow to cool before serving.

One little tip when making these Healthy Sweet Potato Quinoa Bites is to make sure that the leftover mashed sweet potato and the quinoa are cold before using them – it just makes it so much easier to shape into little mini bites! Your favourite little people are going to LOVE these!!
